I was thinking of a nice cake to finish a Sunday roast dinner and I came across a peach blueberry and apple cake. But I didn’t have either blueberries or apples so I decided to make a peach cake.
It turned out it wasn’t too difficult and it was very moist.
- 200gms sugar
- 175gms unsalted butter
- 3 eggs
- Zest of one lemon
- 175gms plain flour
- 2 tsp baking powder
- 4 diced peaches without skins
First whisk 1 and 2 in electric mixer until white colour, then add one egg at a time and combine. Add 4, 5 and 6 and mix well. Fold in 7 and bake at 180c for 45 minutes until toothpick comes out clean.
Enjoy with vanilla ice cream!
